Malang street food never fails to amaze Chef Will Meyrick, the street food chef. So, while in Malang, he dropped by Depot Soto Rampal, a classic restaurant established in 1957, and extremely popular for its Nasi Rawon. Served a generous portion of Nasi Rawon Chef Will is impressed. There is an abundance of flavours; especially in the meat, the super tender beef, and a great tasting chilli sauce.
Following this experience, Chef Will heads back to Tugu Hotel to make his own Nasi Rawon Malang Style. One of the most important elements of this traditional dish is the stock and the paste from the black nut (kluwek). Watch the tutorial, and after the Rawon is ready, prepare the rice and, as additional flavour variations, serve it with a large assortment of garnish such as chopped leek, beansprouts, green shallots, fried shallots, salted duck egg, coriander, and chilli paste or fresh sambal.
